Ingredients

  • 1 1/2 envelopes of unflavored gelatin
  • 1/2 cup cold water
  • 1 Avocado From Mexico hass, peeled and pitted
  • 1 cup low-fat mayonnaise
  • 1 1/2 cup chopped cilantro
  • 2 teaspoons lemon juice
  • salt to taste

Instructions

  1. Mix gelatin in ½ cup cold water, stir well. Then add hot water bath until the gelatin is smooth. In blender or food processor add the avocado, mayonnaise, cilantro, lime juice, salt and blend. Then slowly add the gelatin while still blending.
  2. Pour into a greased mold and refrigerate the mixture for several hours (preferably overnight).
