Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 clove garlics, smashed and peeled
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground chile powder
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1 pound boneless, skinless chicken breast halves
  • 1 can (14.5ounces) low-sodium tomato sauce
  • 1/2 fully ripened Avocado From Mexico, pitted, peeled and diced
  • 1/2 cup shredded monterey jack or pepper-jack cheese
  • 16 tortilla chips

Instructions

  1. In a blender add the chiles, tomatoes, garlic and onion. Blend until it is as pure. In a large pot over medium heat add the olive oil and fry the mixture for 5 minutes. Add the cilantro, broth, salt to taste and leave to cook for about 25 minutes.
  2. Cut tortillas into thin strips. In a skillet heat oil and FRY tortillas until crisp. Drain on plate with paper towels. To serve the soup first add some tortillas to the bowl then add the soup serve with avocado, cheese, cream and more tortillas.
