Ingredients

  • 2 cans of chickpeas
  • 2 cloves garlic, minced
  • 1 white onion, chopped
  • 8 cups chicken broth
  • 2 chicken breasts
  • 2 carrots, peeled and cubed
  • 1 large potato cut into cubes
  • 1 can of green beans
  • 2 tablespoons olive oil
  • 1 sprig epazote
  • 1 1/2 cup tomato puree
  • 2 ears of corn, peeled and cut into chunks
  • 2 chipotle peppers in adobo, minced
  • salt and pepper to taste
  • To Serve
  • cilantro chopped
  • 1 chopped Avocado From Mexico hass
  • lemon wedges
  • 1 cup crumbled fresh cheese

Instructions

  1. In a large pot add oil and saute the onion and garlic. Add chicken and cook until browned. Then add the chicken broth and cook for 20 minutes.
  2. Remove the chicken, let it cool and crumble. In the same broth add the corn, potatoes, peas, carrots, epazote and cook for 10 minutes.
  3. Stir in green beans, chipotle pepper, tomato paste and shredded chicken. Adjust salt and pepper and simmer for another 10 minutes.
  4. Serve with cilantro, avocado, cheese and lemon wedges.
