Ingredients

  • 2 pounds pork loin into pieces
  • 4 new mexico chiles soaked for 30 minutes
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 2 carrots chopped into slices
  • 2 stalks celery, finely chopped
  • 1 can 15 oz of chopped tomato
  • 7 cups chicken broth low sodium
  • 2 cans of white mote or corn pozole
  • 1 tablespoon dried mexican oregano
  • 3 tablespoons of olive oil
  • salt and pepper to taste
  • 1 piece of Avocado From Mexico to accompany
  • cilantro to accompany
  • tortilla chips to accompany
  • lemon to accompany

Instructions

  1. In a blender process the chiles with some of its water.
  2. In a large pot add olive oil, brown the pork and reserve.
  3. Add onion, carrot and celery, let cook for a few minutes and add garlic.
  4. Return the pork to the pan and add the chile puree and tomato. Add the broth, oregano, corn and let cook for 45 minutes.
  5. Accompany with avocado, cilantro, lime and tortilla chips
