Ingredients

  • 3 cups of fresh and sliced mushrooms
  • 1 corn in grain
  • 1 green pepper sliced into squares
  • 2 potatoes cooked and sliced into squares
  • 1 small onion, sliced
  • 1 tablespoon of tomato paste
  • 2 cloves of garlic, finely chopped
  • 1 pumpkin flower bouquet
  • 6 cups of water
  • herbs (cilantro, oregano, dry tomilo) taste smell
  • 3 tablespoons of powdered chicken bouillon
  • 150 grams of cheese in squares
  • 4 tortillas strips browned in oil
  • 1/2 cup of corn oil
  • 1 can small of chipotle chiles
  • 1 hass Avocados From Mexico skinless and diced
  • 3 tablespoons of olive oil

Instructions

  1. In a frying pan with corn oil fry tortilla strips until golden brown (approximately 5 minutes). Put a little olive oil in a saucepan, over medium heat fry the onion, bell pepper, corn kernels and garlic, Cook for 5 minutes and add 6 cups water for broth.
  2. Add the tomato paste, herbs to taste with the bouillon powder.
  3. Leave the stock and let it boil for about 5 minutes and add mushrooms and chile chipotle peppers to taste, Cook for 3 minutes, add already boiled potatoes, pumpkin flower and turn off the heat. To serve the peasant soup we accompanied with squares of fresh cheese, a few cubes of avocado and the Golden tortilla strips.
