Ingredients

  • 3 Avocado From Mexico hass, pitted and peeled
  • 2 cups defatted chicken broth
  • 2 cups coconut water
  • 1 jalapeno chili, seeded
  • 1/2 teaspoon cilantro seed
  • 1/2 cup plain yogurt
  • 2 tablespoons shredded natural coconut
  • 2 teaspoons finely chopped fresh cilantro for garnish

Instructions

  1. In a blender add avocados and chicken broth and blend for 2 minutes. Then incorporate the shredded coconut, jalapeno pepper, coriander seed, yogurt, salt and pepper. Blend for another 5 minutes until creamy.
  2. Serve immediately in soup bowls and garnish with a little chopped coriander leaves on top.
