Ingredients

  • 2 medium, Avocados From Mexico, diced
  • 1 tb fresh lime juice
  • 4 tb light sour cream
  • 1 lb sweet potatoes, peeled and coarsely grated (or spiralized)
  • 2 scallions, finely chopped
  • 2 jalapeno peppers, seeded, diced
  • 1/3 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil

Instructions

  1. Combine first 3 ingredients in a small bowl and gently mash together. Cover and place in fridge until ready to serve.
  2. Stir together potatoes, scallions, flour, eggs, salt, and pepper.
  3. Heat oil in a deep nonstick skillet over medium-high heat. Working in batches of 4, spoon 3 heaping spoonfuls of potato mixture per latke into oil and flatten slightly into pancake ½ inch thick.
  4. Reduce heat to moderate and cook until golden, about 1 ½ minutes on each side. Transfer latkes with spatula to paper towels to drain. Serve with avocado mash.
