Ingredients

  • 2 cup precooked rice
  • 1/4 cup olive oil
  • 4 strips of smoked bacon
  • 2 green apples, cubed and squeeze a lemon over it
  • 1 red pepper, chopped into small cubes
  • 1 green scallion stalk finely chopped
  • 1 clove of garlic crushed and finely chopped
  • 2 ripe tomatoes, seeded, cut into small cubes
  • 1 cube of chicken stock
  • 4 cups hot water
  • 1 hass Avocado From Mexico peeled and sliced ​​
  • salt and pepper to taste

Instructions

  1. In a large pot pour oil and washed & drained rice and brown. Let it brown for 5 minutes. Add the scallions, tomato, bacon, pepper and garlic and brown for 5 minutes more
  2. Stir in water, chicken stock, and simmer uncovered until it begins to boil then, cover the pot and reduce heat
  3. Add the apple and cook for 10 minutes or until rice is tender. If necessary add more liquid.
  4. When ready place it on a rice mold, and garnish with avocado slices over top and serve.
