Ingredients

  • 1 large (1 pint) mason jar
  • 2 under-ripe Avocados From Mexico, peeled,sliced
  • 1 cup distilled or cider vinegar
  • 1/3 cup sugar
  • 1 tb kosher salt
  • 1 tb black peppercorns
  • 1 tb yellow mustard seeds
  • 1 tsp red pepper flakes
  • 1 clove garlic, sliced
  • 10 springs cilantro

Instructions

  1. In a médium sauce pan, combine vinegar, wáter, sugar and salt and bring to a boil, stirring until sugar is dissolved. Set aside to cool.
  2. In a mason jar, place peppercorns, red pepper flakes, garlic, cilantro sprigs and avocado slices. Poor cooled pickling mixture into the jar and seal tightly.
  3. Refrigerate for at least 2 hours before serving or up to 1-month.
