Ingredients

  • 2 tb freshly squeezed lemon juice
  • 1 tb balsamic vinegar
  • 1 tsp dijon mustard
  • salt,pepper to taste
  • 1 tb honey
  • 2 tablespoons extra-virgin olive oil
  • 6 cups (or 1 bag) of baby arugula
  • 1 1/2 cup cannellini beans, drained, rinsed
  • 1 1/2 cups cooked quinoa
  • 6 ounces canned tuna (packed in water), reduced sodium
  • 4 tb crumbled feta cheese
  • 1 medium, ripe Avocados From Mexico, diced

Instructions

  1. Whisk together lemon juice, balsamic, Dijon, and a pinch of salt and pepper in a small bowl until well combined. Add honey to taste and slowly whisk in olive oil until well combined.
  2. Place arugula in a serving bowl and top with beans, quinoa, tuna, feta, and avocado.
  3. Drizzle with half the dressing and serve the remaining dressing on the side.
