Ingredients

  • 1 medium Avocado From Mexico, diced
  • 1 cup rice, cooked
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup tomato salsa
  • 2 tb lime juice
  • 3/4 cup cilantro, reserve some for topping
  • 1/2 cup corn, cooked
  • 3/4 cup pico de gallo (or fresh, chopped tomatoes)
  • 1 medium Avocado From Mexico, diced
  • 12 bibb lettuce leaves (or iceberg)

Instructions

  1. Prepare rice according to package directions;
  2. In a medium pot over low heat, combine beans and tomato salsa. Heat through, stirring occasionally (about 8-10 minutes);
  3. In a medium bowl, combine cooked rice, cilantro and lime juice;
  4. To make wrap: begin with a 1-2 Bibb lettuce leaf and add a scoop of rice mixture; then add a scoop of black beans and top with corn, pico de gallo (or fresh tomatoes) and diced avocado. Top with reserved cilantro leaves. Fold like a taco and enjoy!
