3/4 cup pico de gallo (or fresh, chopped tomatoes)
1 medium Avocado From Mexico, diced
12 bibb lettuce leaves (or iceberg)
Prepare rice according to package directions;
In a medium pot over low heat, combine beans and tomato salsa. Heat through, stirring occasionally (about 8-10 minutes);
In a medium bowl, combine cooked rice, cilantro and lime juice;
To make wrap: begin with a 1-2 Bibb lettuce leaf and add a scoop of rice mixture; then add a scoop of black beans and top with corn, pico de gallo (or fresh tomatoes) and diced avocado. Top with reserved cilantro leaves. Fold like a taco and enjoy!
