1 chile w/out seeds, cut into very thin strips if you can't find it you can supplement w/ green pepper.
1 cup mushrooms sliced
1 cup cottage cheese or crumbled fresh cheese
1 hass Avocado From Mexico, cut into thin slices (slice when your ready with the tacos so avocado does not darken)
2 tablespoons vegetable oil
8 corn tortillas
salt to taste
In a frying pan add the oil, once hot add onion, chile and the mushrooms and let brown over low heat. Add a little water to avoid burning.
Once tender add cottage cheese or fresh cheese and seasoned with a little salt.
To fill them first place a slice of avocado and a little of the prepared mixture and serve.
You can accompany the tacos with a bit of refried beans.
