Ingredients

  • 12 corn tortillas
  • 1 chicken breast
  • 1 can evaporated milk
  • 2 hass Avocados From Mexico
  • 2 teaspoons cilantro powder
  • 1 tablespoon of powdered chicken bouillon
  • 2 serrano peppers, seeded
  • 1 1/2 cups of water
  • 1/2 cup chopped fresh cilantro.
  • 1 cup grated manchego cheese
  • pepper and salt to taste

Instructions

  1. Preheat the oven to 350 F.
  2. Put to boil the breast of chicken in water with salt and pepper to taste for 15 min. Once cooked we shred it. Heat the tortillas a few seconds in a pan with oil. In a blender add evaporated milk, avocados, cilantro powder, powdered chicken stock, the Serrano chiles and water, blend for 5 min.
  3. Add chicken to the tortillas, roll them in the avocado sauce, sprinkle manchego cheese on top and put in the oven for 10 minutes or until golden and cheese is melted. Serve 3 enchiladas on the plate with chopped fresh cilantro.
