Ingredients

  • 3 Avocados From Mexico halved then cut into squares in shell
  • 2 limes juiced
  • 2 roma tomato small dice
  • 1/3 cup cilantro (chopped fine)
  • 1 radish (half chopped, half julienne for garnish)
  • 1 seedless orange (segmented and diced, save a few pieces for garnish)
  • 1 serrano sliced thin into rounds with seeds (save a pinch for garnish)
  • 6 small (grape sized) tomatillos or 2 regular sized
  • 1 tsp extra virgin olive oil
  • micro cilantro (for garnish)
  • 1 1/3 tsp smoked sea salt (to taste)
  • 1/2 tsp ground cumin (toasted)
  • 1/3 tsp cayenne
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground garlic
  • 1/2 tsp ground black pepper
  • 1/3 tsp ground chipotle powder

Instructions

  1. In a small pot poach tomatillos in olive oil for 30 seconds, season with a pinch of the dry mix and brule with a torch till nicely roasted.
  2. Chop and add to wet mix.
  3. In a bowl mash avocados by hand but try to stay chunky, add wet and dry ingredients then fold together.
  4. Lastly garnish with saved orange, micro cilantro, serrano rounds and julienned radish.
