Ingredients

  • 1 tsp unsalted butter
  • 3 -4 thin slices of black forest, honey ham, or deli meat of your choice chopped
  • 4 large eggs well beaten (with a whisk or fork)
  • kosher or sea salt to taste
  • 1/4 cup melty cheese such as monterey jack, mozzarella, oaxaca shredded
  • 6 flour tortillas
  • 1 ripe Avocado From Mexico halved, pitted, meat scooped out, and sliced
  • 1/4 cup mexican cream (or latin style cream or crème fraiche)
  • 2 tsp adobo sauce (from chipotle chiles in adobo sauce) (or to taste)
  • chives chopped (to garnish chipotle crema)

Instructions

  1. To make the eggs:
  2. Heat butter in a medium sauté pan over medium heat.
  3. Once melted and bubbly, add ham. Cook for 1 to 2 minutes, stirring occasionally until barely beginning to brown along the edges.
  4. Lower the heat to low, pour in beaten eggs and sprinkle with salt to taste. Stir the eggs a couple times, as they cook, for about 4 minutes.
  5. Once they begin to set, incorporate the grated cheese and let it melt as the eggs finish cooking, 1 or 2 minutes more. Don’t overcook the eggs; turn off the heat while they are still moist.
  6. To make the chipotle cream:
  7. Combine the Mexican crema and adobo sauce, from the chipotles in adobo, in a small bowl and mix well. Garnish with chives. Set aside.
  8. To assemble burritos:
  9. In a hot comal or skillet set over medium heat, heat the flour tortillas for about 30 seconds to 1 minute per side. Don’t let them toast, just heat thoroughly.
  10. Taking one tortilla at a time, spoon in a couple tablespoons of the ham and cheese scrambled eggs, add a couple slices of avocado, and roll.
  11. Serve along with the chipotle cream.
