Preheat oven to 375 degrees F. Line a muffin tin with 12 paper liners.
Make streusel topping and set aside (or refrigerate while making muffin mix).
In a médium bowl, mix together flour, sugar, baking powder and salt.
In a separate bowl, combine oil, egg and milk. Add vanilla and avocado and use an electric mixer to beat until smooth.
Combine the egg and avocado mixture to the bowl of dry ingredients and mix well. Batter will be thick.
Do not over-mix. Gently fold in the blueberries.
Spoon batter into muffin pan and top with streusel topping.
Bake for 20-25 minutes, or until a toothpick comes out clean.
