Ingredients

  • 2 chiles poblanos, roasted, peeled and seeded
  • 1/2 cup water
  • 3 tablespoons white vinegar
  • 1 clove chopped garlic
  • 1 teaspoon chopped fresh oregano
  • 3 tablespoons of olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Guacamole
  • 2 ripe Avocados From Mexico
  • 1/4 cup finely chopped white onion
  • the juice of 1 lemon
  • 1 tablespoon of cilantro
  • 2 tablespoons of olive oil
  • salt and pepper to taste
  • 1/4 cup chopped tomato for garnish

Instructions

  1. In a zip lock bag place water, vinegar, garlic, oregano, oil, salt and pepper. Add the chiles in this mixture and let stand in the refrigerator until the next day. (a minimum of 8 hours)
  2. In a bowl mash the Avocados. Add the onion, add salt, then the avocado. At the end we add the juice of lemon, onion, cilantro, oil, salt and pepper to taste.
  3. Drain the chiles, stuff with guacamole, garnish with tomato and serve.
