Ingredients

  • 4 tomatillos husked, washed and quartered
  • 4 onions chopped
  • 6 jalapeños seeded and chopped
  • 6 olive oil
  • 3 low-sodium chicken stock or water
  • 8 Avocados From Mexico peeled, pitted and diced
  • 4 cilantro leaves
  • 1 cup lime juice
  • 1 tbsp salt

Instructions

  1. In saucepan over medium heat, cook tomatillos, onions and jalapeños in oil; about 5 minutes or until they start to soften.
  2. Add broth or water; bring to a simmer and cook 5 minutes more.
  3. Cool to room temperature.
  4. In blender, pulse tomatillo mixture with avocados and cilantro until roughly puréed.
  5. Add lime juice and salt; refrigerate until cold. Thin with water to desired consistency.
